- Cut eggplants (baingan) into half, brush the surface with olive oil and sprinkle salt over it and bake in a oven for 45 minutes.
- Take them out and scoop out the soft white part and keep aside.
- In a pan heat oil and add green chillies and onions and cook till onions are golden brown.
- Add tomatoes, tomato ketchup and spices, the scooped out brinjal and cook on low flame for 5-10 minutes.
- Fill the brinjals with the stuffing, drizzle grated cheese on top and bake them for 12 mins.
- Use the remaining stuffing as gravy and shift the baked brinjals to the gravy & serve it
