- Dry roast methi dana, fennel seeds, ajwain, cumin seeds and kalonji and grind it coarse in pestle and mortar.
- In a bowl combine all the spices and keep aside.
- Heat oil in a pressure cooker on a medium flame and asafoetida, bay leaf and coarsely grounded spices and saute it well.
- Add chopped ginger and tomato puree to it. Add salt and let it cook until it release oil.
- Add potato cubes and add 2-3 glasses of water. and cover the lid of cooker. cook it until 2 whistles.
- Open the lid and add chopped coriander and kasuri methi.
- Mash the few of potatoes with masher or with the back side of ladle and let it cook until the gravy thickness.
